Hard boiled Hell

Why can't I ever get my girl's eggs to peel properly when I hard boil them. Store bought eggs are no problem for me.

    I have the same problem!!!!

    what is the deal?
    I tried soaking in ice water right after
    I tried pealing asap
    salt in the water
    slower/faster boiling times and temps

    what is the deal?

    I'm not sure about the different sources of eggs. I buy organic free range eggs and don't have a problem. My method is to boil 3-5 minutes, turn the heat off, and let the eggs sit in the hot water awhile. Then after a good half hour or more, I dump the water, rinse once in cold water, then let them soak in a second batch of cold water for another little while. Then I take them out and either let them dry or peel right away. The shells come off easily.

      The deal is that since store bought eggs are usually several weeks old, there has been time for some of the liquid to have evaporated out through the shell. When they are boiled, the insides pull back a little from the shell, thus they peel easier.

          ah, crap.. well I have a few dozen right now, my girls are laying demons at the moment, I'll put a dozen aside for awhile and test it out.

            I found this recipe for hardboiled eggs and it seems to work on our fresh-laid ones:

            place eggs in pan, water covering 1"
            bring to boil
            remove from heat, let sit 17 min.
            plunge into ice water 2 min
            replace in boiling water, 10 sec.
            replace in ice water.

            The cold-hot-cold is supposed to make the white and the shell expand/contract and thus separate......no green ring around the yolk, either. I use my vegetable steamer pot with its colander. Makes moving the eggs into hot/cold baths very easy!

    Because your girls are laying beautiful fresh eggs the membrane under the shell is still attached to it, making them a bitch to peel. I have a separtate carton for my hard boiled eggs. I let them sit itn the box for several days before trying to h.b. them.
